We called in here as part of a day trekking on horseback around the Carmargue, serendipity indeed! While our ponies rested, ate and drank we did the same. The meal focused on local specialities-beef terrines and charcuterie, salad with an anchovy sauce followed by a civet of bull. Not for the fainthearted or végétariens but good home cooked food.The manade is a working establishment-breeding horses and cattle so is worth a visit in its own right.

Lovely welcome, great location and a welcome break!

We stayed one night with an induction of the life on the manade and lunch.
We were upgraded from the Pandora and Rodin rooms to the fantastic Garlan 2 beds gite (newly refurbished with Jacuzzi bath, air conditioning, lounge and kitchen.
The deco and furniture are made out of floated woods of the upmost quality.
The breakfast was a feast of bull charcuteries, homemade jams, fresh bread and viennoiserie and fresh fruits in plenty.
Then our host Guillaume gave us the induction. There were supposed to be other people with us, but they cancelled at the last minute.
The induction was only for the 3 of us, but Guillaume didn't mind. He did a fantastic job passing on his passionate knowledge of the manade and the bulls to us.
Then he took us on a ride thought the fields of bulls on a trailer attached to his tractor.
He explained the life of the bull from its birth to its death, as Camargue bulls are not killed in the corrida games (unlike the Spanish ones)
He has a real affection for his champions which shows in the care he gives them.
We ended our visite with a delicious lunch made of some of the Camargue specialities : carpaccio of bull, saucisson of bull, anchoiade with its raw veg for starters and a gardiane de taureau for main course, which is a delicious bull stew, served with the wine of the property.

FANTASTIC !!

The Manade des Baumelles is a traditional Carmarguese establishment for cattle breeding, which offers some newly renovated rooms and one apartment for overnight stays. It is located in the quite and picturesque back-country of Saintes-Maries-de-la-mer. Me and my boyfriend stayed here for three nights.

Due to some confusion at our arrival we spent our first night in the Pandora Room. This is a basic room, but it was nice and clean, so we did not mind. The next two nights we spent in the stylishly furnished Garlan Apartment - a real highlight of our holiday. The apartment is located on the first floor of the building offering a great view over the Carmargue.

As for the food - breakfast is included: specialties made of bull meat, freshly baked bread, cheese, home-made jam and fruits are delicious. The restaurant also serves lunch that has to be paid separately (but if you take the manade tour, it is included). The à la carte menu includes local specialties e.g. bull steak and is absolutely worth a try. The restaurant closes for dinner, so you either have to go grab something to eat in Saintes-Maries-de-la-mer or ask the really friendly and forthcoming staff for some cold cuts, vegetables or fruits ;-)

Additionally to overnight accommodation, the Manade des Baumelles offers the opportunity for visitors and guests to take part in different activities related to the work with bulls and horses. We took the manade tour where Guillaume, the manadier, explained us a lot about raising bulls for the traditional Carmarguese bull fights. We also got to see the cattle herds and also Garlan - the retired star bull of the Manade whose statue is exposed in front of the Saintes-Maries-de-la-mer bull fighting arena.  

We were very happy that we chose to stay at the manade and would recommend it to anyone who is visiting the Carmargue, to spend some nights here.

Great Opportunity to Experience the Carmargue in an Authentic Way

We stayed two nights in one of the 2 rooms that the Manade offers. Nicely decorated in a Camargue style, newly renovated, the room was very comfortable. 
We really enjoyed to spend time with the Gardians and learn more about their work with the bulls and horses. We went on horses through the Manade and learned to work with horses - this was an amazing experience! 
The staff is extremely friendly, the breakfast was delicious and we just enjoyed being out in the nature and waking up to see the poneys.

Stay at the Manade and enjoy life with horses and bulls

The Manade des Baumelles, a traditional bull breeding farm, also has a charming dining room (and outside seating) in addition to rooms to rent for Camargue trekkers. We explored the property and met some bulls and horses as part of a Viking river cruise on the Rhone, but the real joy of the place was this little restaurant, which served us all manner of foods made from bull meat -- pates, salume, carpaccio, and a lovely stew over Camargue rice. We also had an anchovy mayonnaise with fresh vegetables that was heady but delicious, and concluded with the local version of tiramisu, more like a slice of cake. The feast was washed down with local Rose (Listral) and followed by a short lecture on the bull runs. Could not have been more charming.
